This tostada recipe is a delicious and easy Mexican food recipe that is perfect to make on your first night of camping. It is also an easy camping recipe that you can cook in just a few minutes that will put a hot meal on the table with very little effort.
This Mexican food recipe can be cooked using only a single small pot to warm the refried beans. The other ingredients can be cut up and placed in zip-lock bags the night before you depart on your camping trip.
Ingredients (4 tostadas):
- 1 small can of refried beans
- 1/2 cup grated cheese
- 2 or 3 roma tomatoes (cut in small pieces)
- 1/3 head of iceberg lettuce (chopped)
- Salt & pepper
- Tostada shells
Cut the tomatoes in small pieces approximately 3/4 inch in size. Chop about 1/3 to 1/2 head of iceberg lettuce.
Note: The tomatoes and lettuce can be cut the night before to reduce preparation time.
Spread the refried beans from the can onto the tostada shells and sprinkle some grated cheese on top. Cover with a paper plate, and heat in your microwave for one minute (if you have a microwave).
If you are on a conventional camping trip and do not have access to a microwave, you can heat the refried beans in a small pot and spread the heated beans on the tostada shells. While the beans are hot, sprinkle grated cheese on top so that it melts.
Add the tomatoes and lettuce as desired and season with salt and pepper. You can also add jalapeños and avocados to make these tostadas more interesting.
