Tex-Mex Migas - Getting Started

A small plastic cutting board is very useful if you are not planning to pre-measure / cut the ingredients before you leave home. Personally, for this meal, I prefer to cut them fresh at the camp site. The following Mexican food recipe serves two campers with healthy appetites.

Ingredients (serves 2):

  • 1 roma tomato
  • 1 jalapeƱo pepper
  • 4 slices of Canadian bacon (optional)
  • 1 Slice of Colby Jack Cheese
  • 4 or 5 tostada chips (crumbled)
  • 1 tbsp. olive oil
  • 4 eggs
  • salt & pepper

Tex-Mex Migas - Cooking Instructions

Chop the tomato, jalapeno, and Canadian bacon into small pieces. Add the three ingredients to your skillet along with some salt and pepper and olive oil. Cook on low heat until the veggies get a little soft and the Canadian bacon gets slightly browned on the edges.

Turn the heat down a little more and add the eggs. With a spatula, turn the eggs over a few times (mixing them with the veggies and bacon), until they are about 2/3 done. Add the crumbled tostada chips. Break the slice of colby jack cheese into 1 inch sized pieces and sprinkle them on top of the eggs and crumbled chips.

Gently mix in the cheese and chips, turning the ingredients over and over until the cheese melts.

Migas are best served hot. You can also add sliced avocado and refried beans to this easy Mexican recipe. If you want to eat your migas like a breakfast taco, be sure and remember the tortillas on your grocery list.
