Banana Wheat Pancakes

Banana wheat pancakes are delicious and easy to cook, whether you are RV camping or tent camping. We discovered this recipe last year while experimenting with our wheat pancake breakfast.

To make preparation easier, we always pre-measure some of the ingredients before we leave home and put the contents into baggies. We do this with our pancake mix so that we don't have to take the whole box with us.

We use a 10-Grain, Pancake & Waffle, Whole Grain Mix for our banana wheat pancakes.  We usually prepare enough batter to serve two, but you can always increase the amount to suit your family's needs.

Ingredients (Serves 2)

  • Wheat pancake mix
  • One banana
  • One egg
  • One cup of milk
  • One tablespoon of olive oil (Extra Virgin)

Cooking instructions:

Cut one banana into thin slices, then cut each slice into 4 pieces. Combine the pancake mix, egg, milk and oil, and mix well. Once the most of the lumps are gone and the batter is ready to pour, lightly stir in the banana pieces.

Coat a skillet or griddle with a thin layer of oil and heat it on medium-high heat. Lightly stir the batter again so that the bananas are mixed in well. Slowly pour/spoon the batter into the skillet until you make the size pancakes that you prefer.

I like to make them small (about 4 to 5 inches in diameter) because they are easier to flip.

They are best served hot! You can add maple syrup too! That makes them even more tasty. You could also substitute strawberries or blueberries in place of the bananas. We might try that sometime soon...

We really enjoy this pancake recipe, and make it almost every time we go camping. We hope you find it a delicious and easy camping recipe.
